Stancato's Italiano Sonoran simply defined, expresses a naturally developed cooking style. It is a chef’s take on blending real Sicilian heritage with the cultural experiences from growing up in Tucson, Arizona & the Sonoran desert.

Grandma Stancato’s Story and her Sicilian recipes are what first started chef Riley down the path to becoming a chef at an early age.

In addition to Stancato’s family recipes, the recipes in Becoming a Stancato will feature a curated collection from Riley’s career as a creative force in Tucson’s Culinary scene. Including things from Pop-Up Tucson, Barrio Sandwiches, Flora’s Market Run, Commoner & Co, Bluefront American classics, FiLLY Burger & way more.

Formerly a ghost kitchen, Stancato’s will continue as an Italian-American lifestyle brand featuring clothing, accessories, and eventually a cookbook. These lifestyle products will go along with the brand image and storyline in the book.

Stancato’s Italiano Sonoran brand & Chef John Riley Stancato will debut long awaited Becoming a Stancato the cookbook late 2025.

The foundational concept behind Stancato’s brand is “Cent’anni,” a traditional Italian phrase meaning “may you live 100 years.” 

Grandma Stancato’s legacy lives on in our intention and commitment to quality, longevity, & conviviality. In alignment with the number 100 and Grandma Stancato’s own Cent'anni Accomplishment (1913-2013) , each product we make will bear a Cent'anni Seal to assure it is of 100% authenticity.
